🥬❤️ My Valentine’s Day Confession: I Love Kale

Like… I really love kale.

I put it in everything.

✅ Eggs in the morning
✅ Ramen for lunch
✅ Quinoa for dinner (or whatever grain I’m pretending is quinoa)

If I’m eating food, kale is probably showing up uninvited like it pays rent.


Why Do I Like Kale?

Honestly?

Because it’s ridiculously good for you.

Back in college I worked at GNC, and while I was there I read every nutrition book I could get my hands on. The first one I read was basically an encyclopedia of nutrients, breaking down every vitamin and mineral one by one.

And the takeaway was simple:

🥊 Dark leafy greens are the nutritional heavyweights.

And kale?

Kale is basically the undefeated champion of the leafy green division.

It’s packed with vitamins, minerals, antioxidants, and it’s also extremely high in fiber.

And yes…

I eat the stems.

Because I don’t waste nutrients.


🔥 Kale Recipe #1: Coach Brian’s Bacon Kale Scramble

This is one of my favorite meals when I want something that tastes amazing and makes me feel like I’m doing something productive with my life.

Here’s how you make it:

  • Start with local nitrate-free bacon
  • Add shiitake mushrooms
  • Add green onions
  • Add finely chopped kale stems
  • Sauté for 5 to 10 minutes
  • Add 2 cups of kale (don’t worry, it cooks down)
  • Add sun-dried tomatoes
  • Add 3 eggs
  • Cook for 2 to 3 minutes
  • Turn off the heat
  • Add goat cheese

☕ Coffee and toast optional.
🏆 Feeling like a champion afterward is not optional.
